The gluten
Gluten is a complex protein comprised of Gliadin and Glutenin and it is present in wheat, barley, rye, spelt, and oats.
Gluten is fundamental in giving fluidity, consistency and elasticity to bread dough. It is also fundamental for celiac sufferers to completely eliminate it from their diets - something that is not always easy.

Let's look at a little history.
In Italy the fight against celiac syndrome has an "old" story more than forty years old, even though this intolerance was admirably described in 1988 as the typical expression of poor intestinal absorption.
In recent years important results have been obtained in the scientific research field, in diagnosis and in divulging awareness of it. We just have to think that a homogenous incidence of one in 100-300 is talked of in the general world population. In Europe alone 1% of the population proves to be genetically intolerant to gluten.
